Step 1

In a wide shallow bowl or deep dish, whisk melted unsalted butter, granulated sugar and brown sugar until creamy.

Stir in unsweetened cocoa powder, salt, espresso powder, vanilla extract, vegetable oil and heavy cream Whisk again and then microwave for 30 seconds or until warm (NOT hot) and whisk to dissolve sugar and cocoa.

PRO TIPS & HACKS FOR THE BEST BROWNIE:

  • Or buy chocolate chips and unsweetened cocoa to make it rich in cream[. It makes all the difference to be top shelf!
  • And you might want to try a bit of espresso powder as well—it just enhances the chocolate and won’t give it any coffee flavor (but good luck finding that in France).
  • When it is done, please let the brownies cool off for a good 25–30 minutes before you slice them so that they do not fall apart.
  • Avoid overbaking! Bake them for 30-35 min, and enjoy your fudgy brownies! If you like yours on the firm, set them for closer to 35 minutes.
